Amuse Bouche
Mung Bean Dosa, Caramelized Onion and Parsnip, Roasted Five Spice Garbanzo Bean, Ela Farms Pear Jam

Salad
Kale-Frisee-Spinach Salad, Shaved Radish, Edamame and Pomegranate Seeds, Parmigiano Reggiano, Citrus-Dijon Vinaigrette

Entree
Balsamic Marinated Beef Sirloin, thinly sliced, served over Farro with Roasted Butternut Squash and Asparagus finished with Ela Farms Peach-Plum Glaze.

Vegetarian Entree: Same as above with Grilled Tempeh in place of Beef

Dessert
Cinnamon, Browned Butter Apple Tart with Fig and Toasted Hazelnuts finished with Creme Anglaise featuring Ela Farms Apple Sauce

As always, Colorado weather is variable.  Please dress appropriately for cooler evening temperatures.  Should Mother Nature decide that the weather will be inclement, we will move the dinner indoors to our packing shed for your dining comfort.
